Bourbon Baked Peaches

These baked peaches are a quick and easy dessert packed with flavor. The caramel like sauce is perfect to pour over the peaches topped with ice cream. This is a great, light seasonal dessert.

This is one of my recipes that I love to make when I want an easy dessert to make that is still comforting. It takes about 30 minutes from start to finish and can be made while dinner is cooking. Once summer rolls around the peaches are perfect for such a simple preparation. 

In this recipe

The caramel like sauce is what gives the peaches their wonderful flavor. While caramel sauces are normally made with white sugar this one is made with brown sugar. You can use either kind of brown sugar but I happen to prefer using dark brown sugar as its flavors are more intense. If you are not a fan of bourbon replace it with additional vanilla or with honey.

Using the right skillet

While you don’t have to use a cast iron skillet for this recipe it does make it easier. You can use a baking dish or sauté pan that can go into to oven. The benefit of using the pan you cooked the sauce in for the peaches is that it is already hot. This will help speed up cooking and also make sure that the peaches cook evenly.

Making baked peaches

When baking these peaches you want to make sure that the cut side is facing down on the skillet or baking dish. The peaches should still be a little firm when they are removed from the oven. If they are cooked too long they can become too soft and turn mushy. The skin may start to peel away from the peach and that is ok.

Do I have to bake them?

No you don’t have to at all. You can place them on the grill as well or cook them on the stove. If you are going to grill the peaches then pour the sauce over the peaches once they are done cooking. If you would like to cook them on the stove to not move the peaches once you have placed them down. You will also want to spoon the sauce over the top of the peaches as well.

Ingredients
 
 

  • 3 pounds peaches halved
  • ¼ cup brown sugar packed
  • ¼ cup butter unsalted
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla
  • ¼ teaspoon cinnamon
  • ¼ teaspoon salt

Instructions
 

  • Preheat the oven to 375°F, 190°C, or gas mark 5.
  • In a cast iron skillet, melt the butter and brown sugar until it boils. Add the salt, vanilla, and bourbon. remove from the heat and add the peaches sliced side down.
  • Bake for 20 minutes or until the peaches are tender but still remain firm enough to hold their shape.
  • Transfer to a bowl and top with remaining syrup. Serve with your favorite ice cream.
