London Broil with Herb Butter

Steak marinated until it is flavorful, juicy, and tender. This London broil is quick to make and cook and makes an inexpensive and tasty meal. All you need is a little time to marinade. 

Everyone needs some go to meals when you need to stretch a buck. This is one of my favorites that I have made for years. I would make the marinade before I left for work and by the time I got home it was ready to go. Pop it in the oven for 10 minutes and you dinner is ready. How I ended up with my version of this is that I had a whole bunch dried herbs and spices but just a little bit of everything. I thought why not add it to a flank steak and see how it tastes. The rest as they say, is history.

I am sure that it feels like there is everything and the kitchen sink in this recipe but everything there makes for a great steak. The important thing is that you get a nice large piece of steak and then all the herbs and spices you want. What is also nice about this is if you have a preference for certain spices over others you can dial some up and others down. However, it is important to make sure that you use a fair amount of seasoning to help flavor the meat.

What is a London Broil?

A London broil is seasoned steak that is broiled or grilled on each side. Normally this is done with a round or sirloin cut of beef however you might find other cuts of meat called a London broil. The name of the cut is more about the preparation than it is where it actually came from. There are several other cuts of beef that might be labeled as London broil. Flank steak is a great cut for when you need to save some money as well.

Allow for a long marinade

Flank steak or other cuts that might be labeled as London broil are relatively low in fat so they will make a healthier option. However that is a trade-off and the lack of fat makes this cut of meat more tough and not as flavorful. While still tasty the marbled fat gives beef a more juicy and more intense flavor. The marinade is there to help offset this so you still end up with a lovely meal. The best part about the marinade is that once you have started cooking the steak you can bring the marinade up to a boil and then strain it if you want and you have a nice little sauce.

Butter and broiling

The herbed butter is another perfect way to add fat back to the steak and help keep it nice and tender. Feel free to add any of the herbs that are in the marinade in the butter along with garlic and lemon zest. Personally I like to leave the butter at room temperature and not chill it. However you can chill it in a log as well. When you broil the steak you want to make sure that you keep the steak at medium rare. This will help keep the steak from becoming too tough and chewy.

Ingredients
 
 

  • 2 pounds flank steak

Marinade

  • 1/2 cup olive oil
  • 1/4 cup soy sauce reduced sodium
  • 1/4 cup balsamic vinegar
  • 2 tablespoons lemon juice
  • 2 tablespoons molasses
  • 3 tablespoons brown sugar packed
  • 3 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried parsley
  • 1 tablespoon ground mustard seed
  • 1/2 tablespoon paprika
  • 1/2 tablespoon dried oregano
  • 1/2 tablespoon ground black pepper
  • 1 teaspoon basil
  • 1 teaspoon salt
  • 1 teaspoon thyme

Herb Butter

  • 1/2 cup butter unsalted, softened
  • 1 1/2 teaspoons lemon zest
  • 1 1/2 tablespoon garlic minced
  • 1 1/2 tablespoons chives fresh, chopped
  • 1 tablespoon parsley fresh, chopped
  • 1 tablespoon thyme
  • 1/4 tsp salt

Instructions
 

  • In a bowl whisk the all of the marinade ingredients together. Pour into the freezer bag and add the steak. Squeeze out as much air as possible and marinate for at least 2 hours up or overnight. Make the herbed butter by mixing all of the ingredients in a mixing bowl until evenly combined. Place onto a sheet of cling film wrap around the butter to form a tube then twist the ends to seal. Roll into a log and refrigerate.
  • Preheat the oven to broil or grill.
  • Place the steak on a sheet pan and place about 6 inches under the broiler. Cook for 5 minutes on one side and 3-5 minutes on the other side depending on the thickness.
  • Take out and let rest for 10 minutes.
  • While the steak is resting heat the marinade in a saucepan until it boils. Remove from the heat and strain if desired.
  • Slice steak into strips across the grain and drizzle with the marinade. Serve with herbed butter.

    haha, everything under the kitchen sink! I love it. I’m always looking for ways to lower my food budget while still eating great food and this recipe is gold! I have never made use of the ‘high broil’ setting in my oven but I think it would be the perfect way to cook an inexpensive marinated steak.
