Old Bay Buffalo Wings

Crispy and with a bit of heat these Old Bay buffalo wings will have you coming back for more. Perfect for tailgating, sporting events, game nights, or just for dinner these wings are sure to be a hit.

There are all kinds of buffalo wings out there and these have always been a go to for me. By adding Old Bay to my spice blend I find that it makes for a unique flavor that you just cannot find anywhere else. This is one of those recipes that when you make them for your friends and family they have to go back for more to figure out just what makes them so good! For a hint of sweetness add just a little brown sugar.

The key to this recipe is the spice blend. There isn’t much to it so getting that right makes for the best wings. The only thing that you don’t want to skimp on is the Old Bay.

Old Bay: this is the cornerstone of this recipe. It is salty so if you are sensitive to salt then you can forego adding additional salt to the chicken. 

Chili powder: gives the chicken a nice smokey flavor to the chicken. 

Cayenne pepper: creates a building heat to the wings that will last while you enjoy them. If you would like to tone down the heat omit it or reduce by half.

Spice it up!

Now after you have made the spice blend one of the things that don’t like to do is to make sure everything that is coated evenly. One of my tricks is to place half of the chicken in a Ziploc bag and then pour in half of the spice blend. Then I add the remaining chicken and top with the rest of the spice blend. Then I shake the bag making sure I keep one had firmly on the zip side to keep it closed. It takes considerably less time and then I can pour them onto the baking rack.

Why the baking rack?

By placing the chicken on a baking rack it keeps them from sitting in their own juices. This helps keep the skin from getting soggy. Also the air flow both above and below the chicken makes sure all sides get nice and crispy. This is also a great alternative than frying since you don’t need oil to get that nice crispy layer. The important thing is to make sure that you spray the baking rack well so that the chicken doesn’t stick. I forgot once and not all of them came off the rack easily or completely.

Making the Old Bay Buffalo Wings

Now that we have a nicely seasoned chicken wing we want to make sure the sauce is just as good. If you want to help cut the heat then add a little brown sugar. It will add a hint of sweetness as well. To get a nice coating of sauce then toss them in a large bowl with the sauce. a few shakes will make sure that everything has a nice even coating. Now all you need is a little dipping sauce if you want it.

Ingredients
 
 

  • 4½ pounds chicken wings
  • ½ cup buffalo sauce
  • ¼ cup butter unsalted
  • 2 tablespoons Old Bay
  • 1 tablespoon garlic powder
  • ½ tablespoon chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground black pepper
  • ½ teaspoon cayenne pepper
  • ½ teaspoon salt kosher
  • ½ teaspoon ground mustard
  • 3 tablespoons brown sugar optional

Instructions
 

  • Preheat the oven to 425°F, 220°C, or gas mark 7. Spray the baking rack with cooking spray and place in the foil lined sheet pan.
  • In a bowl combine salt, pepper, cayenne pepper, Old Bay, onion powder, ground mustard, chili powder, garlic powder, and mix well.
  • In a mixing bowl or Ziploc toss the chicken wings in the spice blend to coat evenly. Place the chicken wings on the baking rack and bake for 40 minutes. The wings should be crispy and browned.
  • While the chicken is cooking heat the buffalo sauce, butter, and brown sugar, if you are using it, and bring to a boil stirring continuously. Then remove from heat.
  • In a mixing bowl toss the wings in the buffalo sauce, Serve will still hot with your favorite dipping sauces if desired.
