Raspberry and Chocolate Dutch Baby

A twist on the classic German treat this chocolate Dutch baby is  a perfect item for brunch. Top it with an espresso whipped cream, raspberries and your favorite syrup for a wonderful treat. 

A Dutch baby is a great brunch item and dessert. Not that sweet on their own they shine when they are paired with fruits and other toppings. The chocolate one is perfect with espresso, raspberries, and your favorite syrup. One of the best things about this is you can have it done in less than 30 minutes. It makes for an easy treat that is really fun to eat. 

In this recipe

This recipe has really three parts, the Dutch baby, fresh fruit, and the whipped cream. You will want to make sure you bring some additional syrup whether it is maple, chocolate or even caramel. 

Espresso: you will want to use a good espresso powder. This will dissolve easily without impacting the consistency of the Dutch baby or whipped cream. 

Cocoa powder: make sure that is unsweetened otherwise you will have a very sweet dessert on your hands. The amount of sugar added to this recipe is to account for the unsweetened cocoa.

Everything at room temperature

One of the most important things is to make sure that all of the ingredients are room temperature. One of the biggest reasons for this is to make sure that everything mixes evenly. If they don’t mix well you will get a very lumpy or uneven pancake. Secondly if they aren’t at room temperature then when the ingredients cook they will take longer to heat up and therefore slow the rise down. This will cause it to not rise nearly as much.

Making the Dutch baby

The best part about this recipe is that it can be made in a blender or food processor. Once you add all of the ingredients together then just hit the button. One of the important things is to make sure you don’t put the flour or cocoa in first. This might cause it to create a gummy mess at the bottom of the blender or food processor. Then pour the batter into a hot cast iron skillet with melted butter. The skillet needs to be the same temperature as the oven to get the rise this dish is known for.

Wait until the end to open the oven

Whenever you open an oven the temperature can drop the temperature anywhere for 25-100 degrees depending on how much you open it up and for how long. Once this sharp drop in temperature happens the pancake will immediately stop rising and start to fall. It will no longer rise but continue to keep cooking letting you miss out on the wonder texture and might turn out rubbery especially if the middle doesn’t get a chance to rise.

Ingredients
 
 

Dutch baby

  • 6 tablespoons all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • ½ cup whole milk room temperature
  • 3 tablespoons butter unsalted
  • 2 tablespoons sugar
  • 1 teaspoon vanilla
  • 1 teaspoon espresso powder
  • ¼ teaspoon salt
  • 3 eggs room temperature

Espresso Whipped Cream

  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon espresso powder
  • 6 ounces raspberries rinsed and dried

Instructions
 

Making the Dutch baby

  • Preheat the oven to 425°F, 220°C, or gas mark 7 with the cast iron skillet inside.
  • In a food processor or blender add the eggs, milk, flour, vanilla, salt, cocoa powder, espresso powder, and sugar and blend until batter is evenly smooth.
  • Once the oven is hot remove the cast iron skillet and add the butter. Make sure all of the butter has melted. Immediately pour the batter into the skillet and place back into the oven to bake for 15 minutes or until the sides have started turning dark brown.

Making the Espresso Whipped Cream

  • In the bowl of a stand mixer fitted with the whisk attachment whisk the heavy cream on high until soft peaks start to form. Add the powdered sugar and espresso powder and whisk until stiff peaks form.

Assemble the Dutch Baby

  • Once the Dutch baby is out of the oven immediately top with the raspberries and espresso whipped cream. Serve with additional maple syrup and powdered sugar.

  6. First time wanting to make a dutch baby but can’t find espresso powder! Can I use very finely ground espresso, freshly ground in my machine?

    1. The espresso enhances the chocolate however I wouldn’t use ground beans because they will change the texture of the Dutch baby. You can use any instant coffee though and it will work instead of the espresso.
