Roasted Maple Brussels Sprouts

This quick and easy side is a wonderful addition to any meal. These maple brussels sprouts are roasted with bacon and topped with goat cheese. Done in thirty minutes makes this perfect for those with a busy schedule. 

One of my favorite kinds of dishes are those that can be made in thirty minutes or less. These brussels sprouts have a nice maple flavor that goes perfectly with the bacon and the sharpness of the goat cheese. Once you have a bite of these guys you will find it hard to stop eating them.

There isn’t a lot in this recipe which is one of the reasons that I enjoy it. One of the best parts of this recipe that the bacon cooks at the same speed and the drippings will add additional flavor to the brussels sprouts. Feel free to add additional flavors such as pumpkin seeds, pomegranate, walnuts, or chopped dried cranberries.

What bacon should I use?

Thick cut bacon will work better in this recipe as it takes longer to cook and will provide more texture. If you use a thinner bacon you will run the risk of it overcooking in oven. When using thinner bacon slices there are a couple of ways to prevent the overcooking. The first is to cook it separately in a pan and then add it to the brussels sprouts once they are done cooking. The other option would be to add it to the sheet pan halfway through cooking.

Clarifying butter

Clarified butter, also known as ghee, is great for high temperature cooking. Clarifying butter is when the milk solids and water are removed and you are left with the fat layer. The milk solids in the butter are what cause it to burn at high temperatures. Once they are removed the remaining butter can be heated to a much higher temperature and imparts its own flavors. To clarify butter melt it in a sauce pan and then heat until it boils. Skim the top layer of milk solids off. Pour the golden yellow fat layer into a bowl and discard the remaining milk solids at the bottom of the pan.

Making maple brussels sprouts

Once the brussels sprouts are out of the oven toss them with the maple mixture. You will want to sprinkle the goat cheese just before serving as they will still be hot to prevent the cheese from melting. However if you would like to have a creamy sauce that covers the brussels sprouts then toss the goat cheese with the maple mixture right after they get out of the oven.

Ingredients
 
 

  • 1½ pounds brussels sprouts cleaned, halved
  • ½ pound bacon diced
  • ¼ cup goat cheese 2 ounces
  • 1½ tbsp honey
  • 1½ tbsp maple syrup
  • ½ tsp salt
  • ½ tbsp ground black pepper
  • 2 tbsp white wine vinegar
  • 1 tbsp olive oil
  • 1 tbsp clarified butter

Instructions
 

  • Preheat the oven to 400°F, 200°C, or gas mark 6.
  • In a mixing bowl toss the brussels sprouts with the salt, pepper, clarified butter, and olive oil. Add the bacon and pour onto the sheet pan. Roast for 25 minutes or until the bacon is cooked and the brussels sprouts have a char on them and are cooked.
  • While the brussels sprouts and the bacon are cooking mix the honey, maple syrup, and vinegar together.
  • Once the brussels sprouts are out of the oven place them in a mixing bowl and toss with the maple syrup mixture. Add the goat cheese in crumbles and serve.
