Sticky Baked French Toast

A take on the French toast casserole. This breakfast dish takes the best of two of my favorite things, sticky buns and French toast. The gooey sauce will be a welcome surprise for all that eat it. 

I honestly love this dish due to how easy it is to make and how utterly tasty it is. It only takes a few minutes to prepare and then the oven the does the rest. I use the same topping for this as I do my sticky buns. If you like pecans this is a great recipe to add them to.

What you want to make sure is that they bread you use for this casserole is dry. This can be just a day old or you can cut it into pieces and bake at the lowest temperature your oven goes for a couple of hours. The reason for this is the amount of eggs and cream that are in it. If the bread cannot absorb it then you will have runny French toast.

Can I make this overnight?

The answer is yes. You can prepare the casserole the night before and then bake it in the morning. If you are pressed for time you can do everything within an hour. When making it all at once preheat the oven after you have added the bread to the egg and milk mixture. This will give the bread time to absorb the mixture.

For those that want to add nuts to the casserole the best place to add them is in the sticky layer at the bottom. Almonds, walnuts, pecans, hazelnuts and macadamia nuts are all great additions to this recipe. Add 1/2 a cup of chopped nuts to the sticky layer, then place a layer of the bread and egg mixture. follow that up with another 1/2 cup of the chopped nuts and then top with the rest of the bread mixture and bake.

When baking this you might need to cover the top of the French toast with foil if you find the tops are getting brown too quickly. Since the bread is considerably more dry than normal any parts that didn’t get a good soaking might darken quickly.

Ingredients
  

  • ½ cup heavy cream
  • 1 cup milk
  • 1 tbsp ground cinnamon
  • 2 tsp pure vanilla extract
  • 2 tbsp maple syrup
  • 8 eggs
  • 1½ lbs french bread day old, cut into 1 in cubes

Honey glaze

  • ½ cup butter
  • 1 cup brown sugar
  • ¼ cup honey

Instructions
 

  • In a large mixing bowl, whisk the eggs until mixed well. Add the milk, cream, vanilla, maple syrup, and cinnamon. Add the bread, making sure cube is well soaked. Cover and refrigerate at least 2 hours, but can be left overnight.
  • In a saucepan melt butter, brown sugar, and honey together and bring to a boil. Pour into the bottom of a 9 x 13 inch baking dish and set aside.
  • Preheat oven to 350F or gas mark 4. Pour the bread mixture over the brown sugar sauce. Bake for 45 minutes or until the top of the french toast bake is golden brown. Place a serving platter on top of the baking dish and invert to serve or invert once you have scooped it out of the baking dish if desired.
