Triple Berry Cobbler

This berry cobbler is a perfect dessert for a summer evening. Made with blackberries, blueberries, and raspberries it is light and flavorful and perfect with a scoop of ice cream.

Berry cobblers are such a great summer treat. This is one treat I do love to bring to summer pool parties or barbeques. It is always a hit especially when it is served over ice cream. Yes you heard me over. My favorite way to serve it is almost like an ice cream topping. However if you want more cobbler than ice cream the reverse is equally as good.

This recipe works well with both fresh and frozen berries. When available I prefer to use fresh ones just because they are in season. Otherwise the frozen ones allow you to enjoy this treat at any time of year. There is a hint of cinnamon in the cobbler that adds a slight warming sensation.

Cobbler vs Pie

There is a lot of debate between the difference between a cobbler and a pie. The biggest difference is that a pie has to have a bottom crust and is made with a pastry shell. A cobbler has a just a topping and it is more rustic with a biscuit or cakelike topping. Cobblers also have the luxury of being quicker to throw together than most fruit pies as well.

Making berry cobbler

When you make this cobbler you want to make sure that if you are using frozen berries that you do not thaw them. The addition of flour mixed in with the berries will help with thickening the liquid from the berries. However using frozen berries will have more liquid in the cobbler than fresh.

Making the topping

There are many kinds of toppings for cobblers. The one used in this recipe is closer to the texture of cookie dough than a biscuit since the butter has been softened. When making this topping you do not want to mix it too much. It will cause the mix to be too hard and not the soft texture you want.

Ingredients
 
 

  • pounds mixed berries fresh or frozen
  • 2 cups all-purpose flour spooned, leveled
  • cups brown sugar packed
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 cup butter unsalted, softened
  • ½ cup cornstarch

Instructions
 

If using fresh berries

  • In a mixing bowl combine the berries, lemon juice, 1 cup brown sugar, cinnamon, and lemon zest. Allow to sit for 20 minutes.
  • Stir in the cornstarch and ½ cup of flour.

If using frozen berries

  • In a mixing bowl combine the berries, lemon juice, 1 cup brown sugar, cinnamon, lemon zest, ½ cup of flour, and the cornstarch.

Making the cobbler

  • Preheat the oven to 350°F, 177C, or gas mark 4.
  • In a bowl mix the remaining flour, salt and baking powder and set aside.
  • In a mixing bowl using a spoon or spatula mix the butter and remaining sugar. Once combined add the flour mixture. You do not want to beat a lot of air into the mixture.
  • Pour the berries into the baking dish and then either using your hands or a spoon drop the batter on top of the berries. Bake for 45 minutes or until the batter is golden brown and the liquid is bubbling.
  • Allow to cool before serving. Serve with a scoop of ice cream.
