Equipment

  • Cooking shears
  • Sheet pan
  • Pastry brush
  • Small bowl
  • Sauté pan optional

Ingredients

  • 4 lobster tails
  • ½ cup butter unsalted, melted
  • ¼ cup lemon juice
  • 1 tablespoon garlic minced
  • 1 tablespoon parsley fresh, chopped
  • ½ tablespoon oregano fresh, chopped
  • ½ tablespoon thyme fresh
  • ½ teaspoon paprika
  • ½ teaspoon Old Bay

Instructions

  • Preheat the oven to broil or grill.
  • Using the kitchen shears cut 2 lines down the top of the lobster and then remove the strip. Using your finger separate the meat from the inside of the shell and lift it through the opening. Place on a small sheet pan.
  • Mix the paprika and old bay in a small bowl and sprinkle the mixture over the top of the lobster tails.
  • In a bowl mix the garlic, butter, parsley, oregano, and thyme. Brush or spoon the butter mixture over the top of the lobster. You will not use all of it.
  • Broil the tails for 6-10 minutes depending on the size. The tails should be opaque and firm while the shells should be bright red. Remove a serve with the remaining garlic and herb butter. Squeeze lemon juice on top of each tail.
  • To infuse the butter with more flavor using a sauté pan bring the remaining butter to a boil with the herbs and garlic in it. Cook for 2 minutes and remove from the heat. Be sure to not scorch the garlic.
