Ingredients
 
 

  • pounds mixed berries fresh or frozen
  • 2 cups all-purpose flour spooned, leveled
  • cups brown sugar packed
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 cup butter unsalted, softened
  • ½ cup cornstarch

Instructions
 

If using fresh berries

  • In a mixing bowl combine the berries, lemon juice, 1 cup brown sugar, cinnamon, and lemon zest. Allow to sit for 20 minutes.
  • Stir in the cornstarch and ½ cup of flour.

If using frozen berries

  • In a mixing bowl combine the berries, lemon juice, 1 cup brown sugar, cinnamon, lemon zest, ½ cup of flour, and the cornstarch.

Making the cobbler

  • Preheat the oven to 350°F, 177C, or gas mark 4.
  • In a bowl mix the remaining flour, salt and baking powder and set aside.
  • In a mixing bowl using a spoon or spatula mix the butter and remaining sugar. Once combined add the flour mixture. You do not want to beat a lot of air into the mixture.
  • Pour the berries into the baking dish and then either using your hands or a spoon drop the batter on top of the berries. Bake for 45 minutes or until the batter is golden brown and the liquid is bubbling.
  • Allow to cool before serving. Serve with a scoop of ice cream.
