In a mixing bowl combine the berries, lemon juice, 1 cup brown sugar, cinnamon, and lemon zest. Allow to sit for 20 minutes.
Stir in the cornstarch and ½ cup of flour.
If using frozen berries
In a mixing bowl combine the berries, lemon juice, 1 cup brown sugar, cinnamon, lemon zest, ½ cup of flour, and the cornstarch.
Making the cobbler
Preheat the oven to 350°F, 177C, or gas mark 4.
In a bowl mix the remaining flour, salt and baking powder and set aside.
In a mixing bowl using a spoon or spatula mix the butter and remaining sugar. Once combined add the flour mixture. You do not want to beat a lot of air into the mixture.
Pour the berries into the baking dish and then either using your hands or a spoon drop the batter on top of the berries. Bake for 45 minutes or until the batter is golden brown and the liquid is bubbling.
Allow to cool before serving. Serve with a scoop of ice cream.
