In a mixing bowl toss the brussels sprouts with the salt, pepper, clarified butter, and olive oil. Add the bacon and pour onto the sheet pan. Roast for 25 minutes or until the bacon is cooked and the brussels sprouts have a char on them and are cooked.
While the brussels sprouts and the bacon are cooking mix the honey, maple syrup, and vinegar together.
Once the brussels sprouts are out of the oven place them in a mixing bowl and toss with the maple syrup mixture. Add the goat cheese in crumbles and serve.
