Ingredients
 
 

Chicken Meatballs

  • 2 pounds ground chicken
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 tablespoon garlic minced
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon pepper

Buffalo Sauce

  • ¾ cup buffalo sauce
  • cup butter
  • 2 tablespoons brown sugar packed
  • 2 ounces blue cheese crumbled, optional

Instructions
 

  • Preheat the oven to 400°F, 200°C, or gas mark 6.
  • In a bowl add the chicken, eggs, salt, cumin, oregano, garlic, Worcestershire sauce, and pepper. Mix until combined then add the breadcrumbs. Mix until the breadcrumbs are evenly mixed.
    2 pounds ground chicken, 1 cup breadcrumbs, 2 eggs, 1 tablespoon garlic, 1 teaspoon salt, 1 teaspoon cumin, 1 teaspoon oregano, 1 teaspoon Worcestershire sauce, ½ teaspoon pepper
  • Using the 2-tablespoon scoop roll out the meatballs and place them on the sheet pan with a baking rack. Cook for 15 minutes and the meatballs are golden brown.
  • While the meatballs are cooking add the buffalo sauce, butter and brown sugar into a saucepan. Bring to a boil, stirring constantly, and then remove from the heat.
    ¾ cup buffalo sauce, ⅓ cup butter, 2 tablespoons brown sugar
  • Place the cooked meatballs into a mixing bowl and pour the sauce on top. Toss or stir to coat evenly.
  • Top with crumbled blue cheese.
