Ingredients
 
 

  • 6 ears sweet corn husked
  • ½ cup unsalted butter
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon lemon zest
  • 1 teaspoon kosher salt
  • ½ teaspoon smoked paprika

Instructions
 

  • Preheat grill to medium-high heat.

Making brown butter

  • In a sauté pan melt the butter over medium heat. Stir until the milk solids start turning brown and smells nutty, about 3-4 minutes. The butter will foam and then the foam will go away.
    ½ cup unsalted butter
  • Remove from the heat and add the Cajun seasoning and smoked paprika. Stir for 30 seconds and set aside.
    ½ teaspoon smoked paprika, 1 tablespoon Cajun seasoning

Grilling the corn

  • Grill corn over direct heat for 5-10 minutes, turning every 1-2 minutes, until charred in spots and tender.
    6 ears sweet corn

Assembly

  • Once the corn is ready remove from the grill, brush with the browned butter and sprinkle with salt and lemon zest.
    1 tablespoon lemon zest, 1 teaspoon kosher salt
