Hearty Potato Leek Soup

Potato leek soup is a hearty and flavorful soup that is perfect for cooler weather. It is a simple soup made with potatoes, leeks and herbs. Serve with a nice crusty loaf of bread for a perfectly satisfying meal.

Equipment

  • Immersion blender or stand blender

Ingredients
 
 

  • 6 cups chicken stock or vegetable stock
  • 2 pounds russet potatoes peels and cubed (small)
  • 4 cups leeks sliced white and light green parts
  • 1/2 cup onion chopped
  • 1/2 cup crème fraiche
  • 1 1/2 tablespoon olive oil
  • 4 cloves garlic roughly chopped
  • 4 thyme sprigs
  • 2 bay leaves fresh or dried
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions
 

  • In a Dutch oven, over medium heat, heat the olive oil and add the onions and leeks and cook for 5 minutes. Add the bay leaves and garlic and continue to cook for another 2-3 minutes until the leeks have softened.
    4 cups leeks, 1/2 cup onion, 1 1/2 tablespoon olive oil, 2 bay leaves, 4 cloves garlic
  • Add the potatoes, salt, pepper, thyme and chicken or vegetable stock.
    6 cups chicken stock, 2 pounds russet potatoes, 4 thyme sprigs, 1 teaspoon salt, 1/2 teaspoon pepper
  • Bring to a boil and reduce to a simmer, cover and cook for 15-20 minutes or until potatoes can be pierced with a fork.
  • Remove the bay leaves and thyme sprigs, add the crème fraiche and puree using an immersion blender or stand blender. See notes on using a blender with hot liquid.
    1/2 cup crème fraiche
  • Serve with a nice crusty loaf of bread.

Notes

When blending hot liquid in a blender it is important to remove the center of the lid. This will prevent the soup from exploding everywhere and causing a mess.
If you would like to freeze the soup don’t add the crème fraiche while blending and freeze in an airtight container. Add it when you reheat the soup.
