Blueberry stuffed French toast is a perfect way to make a weekend morning special. Filled with blueberry cream cheese and topped with fresh fruit this is the perfect recipe for brunch.
In a mixing bowl combine the eggs, milk, cinnamon, nutmeg, and granulated sugar. Pour into a shallow bowl or plate.
In another bowl add the blueberries and use a fork to mash them against the sides. Add the cream cheese, powdered sugar, and salt. Using a hand mixer mix on low and increase speed until everything is evenly incorporated.
In a frying pan melt a mall amount of butter over medium heat. Dip the Texas toast into the egg mixture to cover each side and place onto the hot pan. Cook 3-4 minutes or until the toast is golden brown.
Flip the toast over and on half of the slices in the pan add ¼ of the cream cheese mixture on top. Once the other side is golden brown place the slice without filling on top and plate.
Repeat with the remaining slices of Texas toast.
Dust with powdered sugar and top with fresh fruit and maple syrup or any additional toppings you desire.
