Soften your ingredients
One of the most important steps for making sure this recipe comes out well is to make sure that the cream cheese is at room temperature. This will allow for things to mix well but also to be able to spread and place on the hot French toast without ripping the bread. When you add the blueberries, you will want to beat until they have burst. You can mash them ahead of time before adding the cream cheese to speed up the process.

Cooking the French toast
This part is like cooking any other slice of French toast. You don’t want to let the bread absorb too much of the eggy liquid otherwise it will become too soggy. I have also found that cooking both sides of the bread makes for a better stuffed French toast then to stuff it first and only cook one side. When you do it this way you also don’t have to worry about too much of the filling oozing out before the toast is cooked.

Stuffing the French toast
Once the first side is done cooking and you flip it over, now is the time to add the stuffing to half of the slices in your pan. Depending on the size of your pan you may have to do these in steps. It is important to make sure that your pan is big enough for at least two slices of bread at a time to make sure everything cooks evenly. Once the other side is ready take the slice without the cream cheese and place it on top and you are good to go!

Blueberry Stuffed French Toast

- Shallow bowl or plate

Ingredients
French toast
- 8 slices Texas toast
- 2 eggs
- ¾ cup milk
- ½ tablespoon granulated sugar
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- Butter unsalted
Blueberry filling
- 8 ounces cream cheese softened
- 4 ounces blueberries fresh or frozen
- ½ cup powdered sugar
- ¼ teaspoon salt
Instructions
- In a mixing bowl combine the eggs, milk, cinnamon, nutmeg, and granulated sugar. Pour into a shallow bowl or plate.
- In another bowl add the blueberries and use a fork to mash them against the sides. Add the cream cheese, powdered sugar, and salt. Using a hand mixer mix on low and increase speed until everything is evenly incorporated.
- In a frying pan melt a mall amount of butter over medium heat. Dip the Texas toast into the egg mixture to cover each side and place onto the hot pan. Cook 3-4 minutes or until the toast is golden brown.
- Flip the toast over and on half of the slices in the pan add ¼ of the cream cheese mixture on top. Once the other side is golden brown place the slice without filling on top and plate.
- Repeat with the remaining slices of Texas toast.
- Dust with powdered sugar and top with fresh fruit and maple syrup or any additional toppings you desire.
