Hasselback sweet potatoes are a wonderful side dish that makes every meal feel special. The potatoes are sliced thinly, brushed with butter, and topped with honey, goat cheese, and pistachios.
Preheat oven to 400°F, 200°C or gas mark 6. Wash and dry the sweet potatoes.
Thinly slice the sweet potatoes stopping about ¼ inch from the bottom of the potato. If you have large chopsticks will help with stopping the knife. Place the sliced potatoes on the sheet pan.
In a mixing bowl combine the butter, oil, pepper, and thyme. Brush ⅓ to ½ of the mixture over the tops of all of the potatoes. Bake for 40 minutes.
Remove from the oven and brush with the remaining butter and oil mixture making sure you get it in-between the slices. Return to the oven and bake for another 20 minutes.
Remove from the oven and top with the honey, goat cheese, and pistachios.
