Goat Cheese Hasselback Sweet Potatoes

Hasselback sweet potatoes are a wonderful side dish that makes every meal feel special. The potatoes are sliced thinly, brushed with butter, and topped with honey, goat cheese, and pistachios.

Ingredients
 
 

  • 6 sweet potatoes
  • 4 ounces goat cheese crumbled
  • 3 tablespoons honey
  • 3 tablespoons olive oil
  • 3 tablespoons butter melted
  • tablespoons pistachios chopped
  • 1 tablespoon thyme fresh
  • ½ teaspoon pepper

Instructions
 

  • Preheat oven to 400°F, 200°C or gas mark 6. Wash and dry the sweet potatoes.
  • Thinly slice the sweet potatoes stopping about ¼ inch from the bottom of the potato. If you have large chopsticks will help with stopping the knife. Place the sliced potatoes on the sheet pan.
  • In a mixing bowl combine the butter, oil, pepper, and thyme. Brush ⅓ to ½ of the mixture over the tops of all of the potatoes. Bake for 40 minutes.
  • Remove from the oven and brush with the remaining butter and oil mixture making sure you get it in-between the slices. Return to the oven and bake for another 20 minutes.
  • Remove from the oven and top with the honey, goat cheese, and pistachios.
