Goat cheese Hasselback sweet potatoes are a wonderful side dish that makes every meal feel special. The potatoes are sliced thinly, brushed with butter, and topped with honey, goat cheese, and pistachios.
There is always something special about seeing a Hasselback sweet potato served with a meal. It instantly makes it that much more special. They also look like you spent a lot of effort, and nothing could be further from the truth. As long as you have a nice sharp knife you will be able to make short work of these potatoes and have a wonderful side dish. They are also great for those that love to meal prep.

One of the cool things about Hasselback sweet potatoes is that you can make them all kinds of ways. This one is one of my favorites.
Sweet potatoes: these potatoes are the foundation of this recipe and feel free to use any variety of them.
Goat cheese: will add sharpness to the sweet potatoes and helps balance the sweetness of the honey and potato.
Pistachio: adds a nice crunch to the potatoes and can be easily substituted with pecans or walnuts.

Choosing the best sweet potatoes
One of the most important things about making goat cheese Hasselback sweet potatoes is to choose the right potatoes. You want sweet potatoes that lay flat on a table or counter. If they raise up in the middle, you run the chance of slicing all the way through the potato. Another situation you might run into as is cooks and naturally starts to flatten the slices will collapse in on themselves.

Preparing the potatoes
You will want to make sure that you do not cut all of the way through the sweet potatoes. This can be done by placing something that will gently stop your knife without dulling it. I personally will use a pair of wood chopsticks that make sure I don’t cut all-the-way through the potato and also will not damage the knife. You can also do this by just eyeballing it however if you can use a tool to help, I would suggest it since they will be more consistent.

Oops, was that supposed to happen?
When you are cutting thin slices out of something you might not cut straight down and that is ok. Unfortunately, that might mean when you cut your next slice you will cut a small wedge of sweet potato out. That is completely ok and will not impact the overall dish. However, by using a guide, such as chopsticks, and gaining enough leverage to cut straight down you should be able to avoid doing it too often.
Also, you might see your potatoes open up or fan out a little like mine did. That is ok and normally happens when the potato is laying completely flat. Some of my potatoes didn’t sit as flatly as I would have liked. However, you want to make sure that you are trying to find ones that when placed on a flat surface most of the surface touches the potato.

Baking goat cheese Hasselback sweet potatoes
The potatoes will take about an hour to bake however there are a couple of things that you will want to keep in mind. Only brush about ⅓ to ½ of the butter mixture on top. Once you remove them after bout 40 minutes of cooking you want to brush them with the remaining mixture making sure you get it in between a lot of the slices. You won’t get it in all of the slices but try for as many as you can.

Goat Cheese Hasselback Sweet Potatoes
Equipment
- Lined sheet pan
- Pastry brush
- Mixing Bowl
Ingredients
- 6 sweet potatoes
- 4 ounces goat cheese crumbled
- 3 tablespoons honey
- 3 tablespoons olive oil
- 3 tablespoons butter melted
- 1½ tablespoons pistachios chopped
- 1 tablespoon thyme fresh
- ½ teaspoon pepper
Instructions
- Preheat oven to 400°F, 200°C or gas mark 6. Wash and dry the sweet potatoes.
- Thinly slice the sweet potatoes stopping about ¼ inch from the bottom of the potato. If you have large chopsticks will help with stopping the knife. Place the sliced potatoes on the sheet pan.
- In a mixing bowl combine the butter, oil, pepper, and thyme. Brush ⅓ to ½ of the mixture over the tops of all of the potatoes. Bake for 40 minutes.
- Remove from the oven and brush with the remaining butter and oil mixture making sure you get it in-between the slices. Return to the oven and bake for another 20 minutes.
- Remove from the oven and top with the honey, goat cheese, and pistachios.
