Grilled Pineapple Salsa

This grilled pineapple salsa is the perfect easy to make condiment for the summer. Made with fresh pineapple, onions, and red bell peppers it is perfect as a dip by itself or on top of grilled fish, chicken, or as a topping in a taco. For some extra heat add your favorite spicy peppers.

Ingredients
 
 

  • 1 pineapple large, skin removed, sliced
  • 1 bell pepper red, halved
  • ½ red onion
  • 1 jalapeño pepper halved
  • 2 tablespoon cilantro chopped
  • 1 ½ tablespoons lime juice
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon cumin
  • ¼ teaspoon red pepper flakes

Instructions
 

  • Preheat the grill to high, 450°F, or 230°C.
  • Brush the pineapple with olive oil.

  • Place the onion, bell pepper, jalapeno and pineapple slices on the grill cut side down and cook for 5 minutes. Flip the pineapple and peppers and cook for another 5 minutes.
    1 bell pepper, ½ red onion, 1 jalapeño pepper
  • Remove the core from the pineapple slices.
  • Chop the onion, jalapeño pepper, pineapple, and red bell pepper.
  • Place the onion, bell pepper, jalapeño, pineapple, cilantro, lime juice, cumin, salt, and red pepper flakes into a mixing bowl and stir to combine and mix well and serve.
