This grilled pineapple salsa is the perfect easy to make condiment for the summer. Made with fresh pineapple, onions, and red bell peppers it is perfect as a dip by itself or on top of grilled fish, chicken, or as a topping in a taco. For some extra heat add your favorite spicy peppers.
Place the onion, bell pepper, jalapeno and pineapple slices on the grill cut side down and cook for 5 minutes. Flip the pineapple and peppers and cook for another 5 minutes.
1 bell pepper, ½ red onion, 1 jalapeño pepper
Remove the core from the pineapple slices.
Chop the onion, jalapeño pepper, pineapple, and red bell pepper.
Place the onion, bell pepper, jalapeño, pineapple, cilantro, lime juice, cumin, salt, and red pepper flakes into a mixing bowl and stir to combine and mix well and serve.
