This grilled pineapple salsa is the perfect easy to make condiment for the summer. Made with fresh pineapple, onions, and red bell peppers it is perfect as a dip by itself or on top of grilled fish, chicken, or as a topping in a taco. For some extra heat add your favorite spicy peppers.
There is something special about grilling fruit that really enhances their flavors. This grilled pineapple salsa is no different. One of my favorite toppings for a lot of my grilled fish and chicken dishes. It even works well when you want to make fish, chicken or shrimp tacos. The best part about this recipe is that it is really easy to make and tastes incredible. If you don’t want to use it as a topping, then feel free to bring it out around friends and family as a perfect summer dip.

There isn’t a lot going on in this recipe, which is always good when you don’t want to spend a lot of time at the grocery store. The good thing is most of the ingredients will already be in your kitchen/pantry.
Pineapple: you will want a large pineapple with the skin removed. See below for tips and tricks for getting a good pineapple.
Jalapeño pepper: adds heat to the salsa. You can swap this out for spicier peppers like serrano, habanero, or scotch bonnet.
Red onion: the grilled and charred onion will add some smokiness and depth to the salsa.

How do I choose a good pineapple
Firstly, you will want to find a pineapple that is mainly yellow with just a little bit of green. Look for a pineapple that is heavy for its size and the fronds should be green and firm, you want to avoid dry or wilted fronds. Then turn it upside down and smell the bottom. It should smell strongly of pineapple but not tangy or acidic. If there isn’t a smell or it smells sour, tangy or acidic then feel free to leave it at the store.

Preparing the pineapple
The first thing you will want to do is remove the top and bottom of the pineapple. Then slice down the sides of the pineapple following its curvature. You just want to remove the skin and keep as much of the fruit intact. Then slice the pineapple into 1 cm thick slices. Once they are cooked you will want to remove the core. I like to make 4 cuts around the outside of the core to maximize the amount of pineapple and then cut the pineapple into small cubes.

Assemble the pineapple salsa
Now this is the easy part, once everything is off of the grill and chopped all you need is to assemble. Add all of the ingredients to the mixing bowl and toss to combine. If you went the route of grilling the limes with the peppers, onions, and pineapple then squeeze the juice at the end.

Ingredients
- 1 pineapple large, skin removed, sliced
- 1 bell pepper red, halved
- ½ red onion
- 1 jalapeño pepper halved
- 2 tablespoon cilantro chopped
- 1 ½ tablespoons lime juice
- 1 tablespoon olive oil
- ¼ teaspoon salt
- ¼ teaspoon cumin
- ¼ teaspoon red pepper flakes
Instructions
- Preheat the grill to high, 450°F, or 230°C.
- Brush the pineapple with olive oil.1 pineapple, 1 tablespoon olive oil
- Place the onion, bell pepper, jalapeno and pineapple slices on the grill cut side down and cook for 5 minutes. Flip the pineapple and peppers and cook for another 5 minutes.1 bell pepper, ½ red onion, 1 jalapeño pepper
- Remove the core from the pineapple slices.
- Chop the onion, jalapeño pepper, pineapple, and red bell pepper.
- Place the onion, bell pepper, jalapeño, pineapple, cilantro, lime juice, cumin, salt, and red pepper flakes into a mixing bowl and stir to combine and mix well and serve.2 tablespoon cilantro, 1 ½ tablespoons lime juice, ¼ teaspoon salt, ¼ teaspoon cumin, ¼ teaspoon red pepper flakes
