Thinly sliced zucchini seasoned with thyme and oregano, topped with shredded parmesan and grilled to perfection. This grilled zucchini is the perfect side dish for the summer.
Preheat the grill to a medium high heat. Spray the basket with oil and set aside.
In a mixing bowl combine the zucchini, olive oil, thyme, oregano, garlic powder, salt, and red pepper flakes.
Spread the zucchini in one even layer in the basket and place on the grill and close the lid. Grill for 2-3 minutes before flipping the zucchini, sprinkle half of the parmesan cheese and grill for another 2-3 minutes.
Remove from the heat and top with the remaining cheese.
