There is always something nice about food that is simple to prepare and tastes great. This is one of my go to recipes especially when the temperature is perfect for grilling. I have always loved how easy it is to make and these zucchini go well with so many dishes that it is a guaranteed hit. The best part is that the zucchini is topped with Parmesan cheese and that makes it all the better.

Herbs: this recipe uses dried herbs, however, feel free to use fresh ones just make sure you double the amount.
Garlic powder: minced garlic can burn quite easily in high heat.

Preparing the zucchini
The first thing that you want to look for are zucchini that are a rich green, firm, feel heavy for their size and are blemish free. This will yield some of the best tasting zucchini. After giving them a rinse you will want to remove the ends and then slice the zucchini on a bias/diagonally. This will provide more surface area for cooking. You can also slice them lengthwise if you would like.

A grilling basket is key
This is even more so when it comes to grilling zucchini that has been sliced on a bias. The basket makes flipping them considerably easier. If you don’t have a basket or don’t want to use one, then you’ll want to slice the zucchini lengthwise and lay them across as many grates as possible. This will make it easier to flip the slices later and the thickness will make it easier to grab and also keep the center from falling apart.

Grilled zucchini cooks quickly
One of the best parts of this recipe is that it cooks quickly, however it cooks quickly. Once the rest of your food is about ready then it is time to get the zucchini on the grill. After the first flip you will want to get half of the parmesan on top of the zucchini so that it will start melting. Then once you have removed the zucchini from the heat you can top it with the rest of the cheese and hit it with a little lemon juice if you want. Â

Parmesan Grilled Zucchini

Ingredients
- 2 ½ pounds zucchini sliced on a bias
- ½ cup parmesan cheese shredded
- 1½ tablespoons olive oil
- 1 teaspoon thyme
- 1 teaspoon oregano
- 1 teaspoon garlic powder
- ½ teaspoon red pepper flakes
- ½ teaspoon salt
Instructions
- Preheat the grill to a medium high heat. Spray the basket with oil and set aside.
- In a mixing bowl combine the zucchini, olive oil, thyme, oregano, garlic powder, salt, and red pepper flakes.
- Spread the zucchini in one even layer in the basket and place on the grill and close the lid. Grill for 2-3 minutes before flipping the zucchini, sprinkle half of the parmesan cheese and grill for another 2-3 minutes.
- Remove from the heat and top with the remaining cheese.
