4 split top buns 1½ pounds cooked lobster meat meat from 3-4 lobsters ¼ cup celery finely diced ¼ cup butter unsalted 2½ tablespoons mayonnaise 1 tablespoon lemon juice 1 tablespoon lemon zest 1 tablespoon chives fresh, chopped ½ tablespoon capers ¼ teaspoon salt ¼ teaspoon pepper
In a mixing bowl combine the mayonnaise, celery, salt, pepper, lemon juice, lemon zest, and capers together.
Add the lobster and mix well to combine evenly.
In a skillet over medium-high heat melt the butter and toast the buns until lightly browned.
Fill the buns with ¼ of the lobster mixture each.
