Easy Homemade Salsa Verde

Made in less than 15 minutes this homemade salsa verde will be a new favorite way make this tasty sauce. With its bright and tart flavors this sauce makes for a perfect dipping sauce for tortilla chips. 

Now who can say no to a dipping sauce that takes less than 15 minutes to prepare? It is packed with flavor that only gets better the long it sits. Personally I love making this the night before I want to eat it to allow all of the flavors to meld together. The best part about this recipe is that you don’t need to cook it at all.

There are just a few ingredients in this recipe. This allows the tomatillos to shine. Most salsa verde recipes will cook the tomatillos either by boiling, roasting, or sauteing. By cooking them they will lose a bit of their acidic qualities and the sweetness will shine through. However when cooked raw they will retain a little bit more of their bite and that goes really well with the lime.

Tomatillo vs tomato

While tomatillo means little tomato they are not the same plant. They are both in the group of foods called nightshades like eggplants and peppers. However the first big difference is that tomatillos have a thin papery husk. Once that is removed the tomatillo will not soften as it ripens but stay firm. Finally tomatillos have a tart, and sweet flavor that is a little fruity and earthy.

Making salsa verde

The most important part of making salsa verde is choosing the best tomatillos. It can be a little tricky to chose the right ones. You want to look for tomatillos that the bottom of the husk has started to spit apart at the bottom and the fruit completely fills out the husks. Once you remove the husks there will be a sticky film on them that you will want to rinse off and dry before putting in the food processor.

  • 2 pounds tomatillos fresh
  • ½ cup onion chopped
  • 3 serrano peppers
  • 1½ tbsp lime juice
  • 1 tbsp garlic about 3 cloves
  • ½ cup cilantro
  • ¼ tsp salt

Instructions
 

  • In a food processor combine all ingredients and then blend until everything is well combined. It should not be completely smooth.
