Kale and Mushroom Frittata

This kale and mushroom frittata is the perfect way to start your morning. Made with eggs, goat cheese, kale and mushrooms it is easy to make and tastes wonderful. This vegetarian dish is a great way to make breakfast or brunch special.

A frittata is an Italian breakfast dish that is one of my favorite things to make during the weekend. They are simple, easy to make, and taste great. It is also a perfect way to make a normal weekend morning just a little bit special. Pair this with some roasted potatoes or a scone, biscuit, or croissant for a wonderful vegetarian breakfast or brunch. One of the coolest things is for those that like to meal prep you can turn the frittata into egg bites and eat them throughout the week.

The best part of a frittata is how easy it is to make and how simple it is. You can use all kinds of ingredients and as long as you have a bunch of eggs you can just whip one of these up whenever you want.

Eggs: this is the basis of the recipe, and you will use quite a few, 8 in fact.

Mushrooms: these add a great flavor and additional texture to the frittata.

Sour cream: helps keep the frittata nice and creamy and little more substantial.

What is a frittata?

A frittata is an Italian baked egg dish that is similar to an omelet. Unlike a quiche that is also baked this one does not have a crust or contain a lot of cream. It can be made with vegetables, herbs, and meat baked into it. You can even use the same fillings as a quiche if you would like and omit the heavy cream and add some sour cream. You can pair this with roasted potatoes or a wonderful pastry and a lovely cup of coffee for a fantastic breakfast.

How do I cook a frittata?

To make this mushroom frittata you want to preheat the oven and then get the mushroom filling cooked. Cook the shallots in olive oil, then add the mushrooms, thyme and then the kale and cook until they are tender. In a mixing bowl that is where you will whisk the eggs, sour cream, salt and pepper. Add the filling and goat cheese and pour into the greased pie or tart pan and bake until the frittata is cooked through. The best way to test this out is to insert a toothpick in the center and see if it comes out clean.

Can you turn a frittata into egg bites?

You most certainly can turn a frittata into egg bites. This is the perfect way for someone to meal prep. Once you have made the egg mixture you will want to grease a 12-cup muffin pan. I like to use a ladle to portion the egg mixture into each well. You do not want to fill them all the way up to the top. As the eggs cook, they will rise and if they are full to the brim they will overflow. Then, all you need to do is bake for 10-15 minutes and you have changed this kale and mushroom frittata into egg bites that are perfect to grab and go for breakfast or lunch.

Ingredients
 
 

  • 8 eggs
  • 8 ounces mushrooms stems removed, chopped
  • cups kale stems removed, chopped
  • ½ cup shallot chopped
  • ½ cup goat cheese crumbled
  • ½ cup sour cream
  • tablespoon olive oil
  • ½ tablespoon thyme
  • ½ teaspoon black pepper
  • ½ teaspoon salt

Instructions
 

  • Preheat the oven to 400°F, 200°C, or gas mark 6. Spray a pie or tart pan with nonstick cooking spray and set aside.
  • In a pan over medium heat, add the oil and shallots. Cook for a minute and add the mushrooms and thyme. Continue to cook until the mushrooms have softened, about 5 minutes, stirring occasionally.
    8 ounces mushrooms, ½ cup shallot, 1½ tablespoon olive oil, ½ tablespoon thyme
  • Add the kale and cook for another 2 minutes or until the kale has wilted. Remove from the heat.
    1½ cups kale
  • In a mixing bowl whisk the eggs, sour cream, salt, and pepper. Add the kale and mushroom mixture and the crumbled goat cheese.
    8 eggs, ½ cup goat cheese, ½ cup sour cream, ½ teaspoon black pepper, ½ teaspoon salt
  • Bake for 20-25 minutes or until a toothpick inserted in the middle comes out clean.

Notes

To make egg bites use a 12-cup muffing tin and spoon in the egg mixture and bake for 10-15 minutes or until a toothpick inserted comes out clean.
