Classic Gremolata Recipe

Gremolata is an easy to make Italian condiment that is can be used on many dishes. Made with only three ingredients it is easy to just whip up and it makes food taste great. It makes a great pairing with your roasted and grilled meats and vegetables.

One of my favorite things about gremolata is how easy it is to make. In about 5 minutes you have a great condiment for anything you want to roast or grill. Made with only 3 ingredients the fresh topping is perfect from everything from a white pizza, a roasted lamb, and even grilled vegetables. This is also a great way to use up any leftover parsley that you might have laying about in your fridge. I make this during the summer to use up the parsley in my garden like I do my basil for making pesto.

In this recipe

There are only 3 ingredients to gremolata. Depending on how you are going to use it you can add some salt and olive oil to turn it into a light sauce.

Parsley: flat leaf parsley is the basis of this dish.

Lemon zest: this adds brightness to the gremolata and helps with dishes that are higher in fat like roasted meat.

Garlic: you can never go wrong with garlic. Grated helps it incorporate better than chopped or minced.

What is gremolata?

Gremolata is an Italian condiment made with only three ingredients. While it is normally served with ossobuco the uses go far beyond that. Due to its light and fresh flavor it complements many different types of recipes as each of the ingredients adds its own unique trait. The parsley and lemon help cut through richer dishes that have fat in it such as ossobuco or roasted lamb. The garlic and lemon are a perfect accompaniment for grilled, roasted or pan seared fish.

Can I change it up?

You most certainly can deviate from the norm to make a sauce/condiment that suits your needs. Firstly, you can add a little bit of salt to the gremolata or if you want it more of a sauce like chimichurri then add a little bit of olive oil and/or the juice of the citrus zest used. Personally, I use the latter especially when I am using it on grilled or roasted veggies. You can also change up the herb and/or the citrus used. Here are some other herb and citrus combinations that I have tried and have found equally delicious:

  • Mint, garlic and lime zest
  • Oregano, parsley, garlic and orange zest
  • Parsley, basil, garlic and lime or lemon zest
  • Tarragon, parsley, garlic and Meyer lemon zest

Ingredients
 
 

  • ¼ cup parsley chopped
  • tablespoons lemon zest
  • 1 tablespoon garlic grated

Instructions
 

  • In a bowl combine the garlic, parsley, and lemon zest.
    ¼ cup parsley, 1½ tablespoons lemon zest, 1 tablespoon garlic
  • Add ¼ teaspoon of salt if desired.

Notes

This will keep for up to 3 days in an airtight container. To preserve longer add 2 tablespoons of olive oil before storing.
