What is a Dutch baby?
It is German pancake made with eggs, flour, and milk like a normal pancake. Unlike normal pancake batter this one will have a consistency similar to that of crepes. There isn’t a leavener in this recipe as all of the rise comes from the high temperature of the oven and the eggs. The butter at the bottom of the skillet will allow it to crawl and raise over the sides much like a popover will. When cooked you will have alight slightly chewy pancake that is perfect to add fresh fruit, chocolate, whipped cream and any other toppings you might think of.

Done in 30 minutes
The easiest way to make this recipe is to put the cast iron skillet in the oven when you start to preheat it. That way it is up to temperature when you are ready to bake. This is a very important step to make sure that the Dutch baby gets a nice rise. While the oven is heating add all of the ingredients into your blender or food processor and blend until smooth. Once the oven is nice remove the pan from the oven, add the butter and stir until it is melted. Pour in the batter and immediately put it back in the oven and bake for 15-20 minutes. It is important to not open the oven once it is in as it will cause the Dutch baby to fall.

Equipment
- Food processor
- Cast iron skillet

Ingredients
- ½ cup all-purpose flour
- ½ cup milk
- 3 tbsp butter
- 1 tbsp sugar
- 1 tsp vanilla
- ¼ tsp salt
- 3 eggs
Instructions
- Preheat the oven to 425°F or gas mark 7 with the cast iron skillet inside.
- In a food processor or blender add the eggs, milk, flour, vanilla, salt, and sugar and blend until batter is evenly smooth.½ cup all-purpose flour, ½ cup milk, 1 tbsp sugar, 1 tsp vanilla, ¼ tsp salt, 3 eggs
- Once the oven is hot remove the cast iron skillet and add the butter. Make sure all of the butter has melted. Immediately pour the batter into the skillet and place back into the oven to bake for 25 minutes or until the sides have started turning dark brown.3 tbsp butter
- Remove from the oven and serve immediately.

Can someone explain why mine came out looking like a burnt cookie
Did you use convection or a regular oven? If you used convection the amount of time is shortened. That could have been the reason that it came out burnt.
