The best part about these ribs is their simplicity. There are only 4 ingredients in this recipe making a great recipe to easily memorize and easily make.

Ribs: baby back ribs are my personal favorite however any pork ribs work.

Barbecue spice rub: this is one of my signature rubs that works perfectly with the hot honey.

Hot honey: adds some heat and sweetness to the ribs and pairs well with the spice rub.

How do I remove the silver skin on ribs?

Firstly, the “silver skin” is a tough and shiny membrane on the back of the ribs. While it is edible it makes enjoying ribs a lit more difficult. It blocks the flavor from getting to the underside of the ribs and it tough and doesn’t break down when cooking making for chewy meat. The easiest way to remove it is to take a butter knife and find a spot on the underside of the ribs near the ends where the bone is exposed near one of the ends of the ribs.

Place the knife between the meat and membrane and gently separate the membrane from the meat until you can slide two fingers in the pocket. Once it is big enough grip the membrane and gently start to pull. You may need a paper towel to get a good grip on the membrane. As more starts to separate you can pull harder until one end is free. Continue until the rest of the membrane has been removed.

Grilling the hot honey ribs

Indirect heat is the way to go with this recipe. You will want to cook the ribs with the meat side down. Since ribs have a good amount of fat in them the indirect heat will help prevent flare ups and burn the sugar that is in the spice blend. This will also allow the ribs to cook evenly. Another thing to keep in mind is that with the use on indirect heat you will not want to lift the lid of the grill open as the temperate change will add additional cooking time.
