These grilled pork chops are easy to make and taste amazing. Marinated in soy sauce, brown sugar and rice vinegar makes these pork chops tender and juicy.Â
This is one of my favorite things to grill during the summer. It only takes about an hour to marinate and 15 minutes to cook. Even better is you can toss some veggies on the grill at the same time and they will be done when the pork chops are. This is a perfect meal for those that don’t have much time to cook. The best part is that this recipe is easy to double so you have plenty for meal prep or leftovers.Â

Rice vinegar: this is a mild acid that will not over power the rest of the ingredients. However you can substitute with white wine or champagne vinegar.Â
Pork chops: you want to make sure that it is a thick cut pork chop.Â
Soy sauce: this will provide the saltiness to this recipe.Â
Paprika:Â will provide the smokiness to the pork chops.Â

Choose the right cut
One of the things you want to pay attention to is the thickness of the pork chop. This recipe is better for thick cut pork chops that are about an inch thick. These tolerate a longer marinade time as well as a nice sear and are less likely to dry out. Also with the bone in cut there is generally more fat so the pork chops will be more tender and flavorful, however this can lead to flare ups on the grill and can cause scorching.Â

Let it marinate
The hardest part about marinades is making sure that you don’t let the meat sit for too long. Certain ingredients will work as tenderizers but too long and the meat can become mushy. The acid in the marinade helps soften the proteins in the pork chop. You will only want to marinate these pork chops for at most 8 hours. This will help prevent the pork chops from becoming chemically cooked and mushy.Â

You gotta sear it first
Much like browning getting a good sear at the beginning of cooking and then reducing the heat is the key to a juicy and flavorful pork chop. If you are using a charcoal grill then once you have seared the pork chips cook them with indirect heat. Conversely if you are cooking with a gas grill you don’t have to move the pork chops just reduce the heat and continue to cook 5 minutes per side or until the internal temp is 165F or 74C.Â

Soy Grilled Pork Chops

Ingredients
- 4 pork chops 1 inch thick, bone in
Soy marinade
- ¼ cup soy sauce
- ¼ cup rice vinegar unseasoned
- 2 tablespoons brown sugar packed
- 1 tablespoon garlic powder
- 1 tablespoon paprika
- 1 tablespoon olive oil
- ½ tablespoon ground black pepper
Instructions
- In a mixing bowl combine the soy sauce, vinegar, brown sugar, garlic powder, pepper, paprika and olive oil.
- Place the pork chops in a Ziploc bag and then pour the marinade into the bag. Remove as much air as possible and seal. Allow to marinate for at least 1 hour but no more than 4.
- Heat the grill to 400°F or 200°C.
- Sear each side of the pork chop for 2 minutes and then move to indirect heat or reduce the heat and cook for another 10 minutes flipping halfway through or until the inside reaches 165°F or 74°C.
Make a glaze (optional)
- In a saucepan cook the marinade until it reduces by half and brush over the pork chops
