Grilled Cabbage Steaks with Gremolata

Grilled cabbage steaks with gremolata is the perfect healthy side dish for a perfect summer meal. It is easy to make and only has a few ingredients. This is a great side to accompany any grilled meats or seafood. It also makes the perfect base for a vegetarian meal.

Cabbage is an underrated vegetable. Most of the time it is just sautéed or put into a soup/stew but there are so many other ways to cook it. Grilling cabbage is such a tasty and low effort way to make this vegetable taste amazing. It is perfect for those that like to meal prep because you can easily grill several heads at once and once chopped up they make great additions to vegan and vegetarian bowls.

Grilled cabbage has only 5 ingredients which makes this a perfect and cheap recipe to make. If you are making the gremolata, you will want some garlic, lemon, and parsley as well but that is easy to get ahold of as well.

Cabbage: I use savoy in this recipe however green cabbage works just as well. See below for some others you can use and ideas for serving.

Olive oil: this will help keep the cabbage from sticking to the grill as well as getting those nice char marks.

Gremolata: adds a nice fresh lemon and garlic flavor that compliments the charred flavors of the cabbage.

Types of grilled cabbage and what to use them with

You can grill any kind of cabbage that you want to, however I do have some suggestions of how to serve them as not all are created equal.

  • Napa cabbage – great for use in buddha bowls and paired with citrus and seafood, also a fun ingredient in dumplings.
  • Red/Purple cabbage – great with roasted/grilled potatoes and chopped up and mixed into kale. Also makes a great topping for burgers and sandwiches
  • Green cabbage – great as is, can also be chopped into buddha bowls. For a twist pair with grilled citrus and grilled chicken.
  • Savoy cabbage (pictured in the recipe) – great as is, pairs well with pork and is a great pairing for Asian themed dishes.

Making grilled cabbage with gremolata in 30 minutes

This side dish is so easy to make and low effort, it is the perfect dish for spending more time with friends and family than standing at the grill. The most important thing is to cut the cabbage into 6 steaks. Start in the middle and work outwards. Slice the cabbage in half and then make 3 ½ inch steaks from each half. If your cabbage is on the smaller side, then you can cut the cabbage into wedges instead.

Brush the cut sides of the cabbage with olive oil and season with salt and pepper. Place them on the grill. While they are cooking you can mix the remaining olive oil with the gremolata. Once the cabbage is cooked remove from the grill and brush with the gremolata. As a side note, as the cabbage cooks the outer leaves might want to flee the scene of the crime. Be gentle when you are flipping the cabbage to keep it intact.

Equipment

Ingredients
 
 

  • 1 cabbage large
  • ¼ cup olive oil
  • 2 tablespoons gremolata
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions
 

  • Preheat the grill to 400°F or 200°C.
  • Slice the cabbage into 6 - ½ inch thick steaks.

  • One a sheet pan brush the cabbage with 2 tablespoons of olive oil. Season with salt and pepper.
    ¼ cup olive oil, ½ teaspoon salt, ½ teaspoon pepper
  • Place on the grill and cook for 7 minutes per side. Be careful with your flip as the outer leaves might be charred and may try and separate from the cabbage.
  • While the cabbage is cooking mix the gremolata with the remaining olive oil.
    2 tablespoons gremolata, ¼ cup olive oil
  • Once the cabbage is done remove from the grill and brush the gremolata on top.

I have been grilling cabbage for years and the addition of the gremolata was a new way to enjoy this.
