This quick and easy grilled shrimp recipe is perfect for summer grilling. With hints of lime and a great jerk seasoning these shrimp are bound to be a hit. Ready in just under 20 minutes you will have a great addition to any event.
Anything that takes less than 30 minutes for me to make as a meal is always going to be a winner in my book. These shrimp are one of the many things I put jerk seasoning one. Especially if cooking over charcoal or any kind of wood the flavors get even more enhanced. This can also be prepared in the oven and is perfect for a quick weekday meal.

What I love about this recipe is that there are only 4 ingredients. You can always add more jerk seasoning if you want additional heat. Keep a couple of limes to squeeze over the shrimp once they are done. A great way to serve this is over a bed of coconut rice and fried plantains or roasted sweet potatoes.

Making the jerk grilled shrimp
Personally I like to put the shrimp into a large plastic Ziplock bag then add all of the ingredients and shake the bag until each are coated nice and evenly. I have found it was easier to coat them all evenly more quickly than in a bowl. However either method will get the job done. One of the things that I like to do is let the shrimp marinate in the seasoning for 30 minutes before cooking to allow for additional flavor development.

Keep an eye on the heat
It is very important to make sure you keep the shrimp away from direct heat on a grill. Since there is brown sugar in the jerk seasoning it can cause scorching if they get too close to the flames. In the oven you want to make sure that they in the middle of the oven and not too close to the heating elements. As the shrimp are on skewers using the C and O method is a little difficult. The best way to check is when both sides have just become opaque. This could be 3-7 minutes depending on how hot your grill is.

The C and O method
This is the method that use to make sure that I don’t ever overcook shrimp. If the tails are still on the shrimp it is easier to tell but with or without tails you will want to look for specific shapes of the shrimp. When the shrimp make a C shape you know they are done. In this case both ends should come close to touching and the shrimp will be cooked just perfectly. However if the shrimp make a O shape where the tails touch or even overlap then they have been overcooked and may be tough and dry.

Jerk Grilled Shrimp with Lime
Equipment
- Mixing Bowl
- Skewers
- Lined sheet pan If baking instead of grilling
Ingredients
- 1 pound shrimp shells removed and deveined
- 3 tbsp jerk seasoning
- 2 tbsp olive oil
- 2 tbsp lime juice
Instructions
Grilling
- Heat the grill. If it is electric heat to 425°F or 220°C.
- In a bowl combine the shrimp, lime juice, olive oil, and jerk seasoning. Toss until all of the shrimp have been coated evenly.
- Place the shrimp on the skewers.
- Cook in indirect heat in the grill for 7 minutes or until the shrimp are opaque.
Baking
- Heat the oven to 425°F, 220°C, or gas mark 7.
- In a bowl combine the shrimp, lime juice, olive oil, and jerk seasoning. Toss until all of the shrimp have been coated evenly.
- Place on the lined baking sheet and bake for 7 minutes or until the shrimp are opaque.
